Fish cakes

 
 
FISH CAKES
 
 
INGREDIENTS FOR CHILI PASTE 
 
     1/2 tsp. of chopped lemon grass
     1/2 tsp. of chopped galangal
     1/4 tsp. of chopped kaffir lime rind
     1 dried chili
     1 tbsp. of chopped krachai
     1 tsp. of chopped shallots
     1/2 tsp. of chopped garlica pinch of salt
 
 
OTHER INGREDIENTS 
 
     70 grams of fish meat
     a pinch of salt
     1/3 cup of sliced long beans
     1 tbsp. of chopped kaffir lime leaves
     2 tbsp. of mixed egg
     1/3 tsp. of sugar
     2 tsp. of soya sauce
 
NB : Fish meat can be replaced by minced pork or chicken 
 
INGREDIENTS FOR DIPPING SAUCE

     2 tbsp. of sugar
     1/4 tsp. of salt
     1/3 cup of water
     1 tbsp. of vinegar
     1 slice of cucumber, chopped
     1/4 piece of red chili, chopped
     ittle bit of coriander
     shallot, chopped


PREPARATION FOR CHILI PASTE

Pound all the ingredients for the chili paste in a mortar, until well ground.


PREPARATION OF FISH CAKE

Put chili paste in a bowl. Add the fish meat, salt, long beans, lime leaves, egg and sugar and mix everything well. Heat up the oil in the wok. Take fish paste and make into small patties. Deep fry in 3 cups of oil until well done.


PREPARATION FOR DIPPING SAUCE

Mix sugar, salt, water and vinegar together. Pour in the wok and heat until boiling. Set aside until cool. Spoon into small dish and add cucumber, shallot and coriander.
